The chef's suggestions for June

New suggestions of the moment are coming to Place Saint-Germain-des-Prés! Fresh, sunny, seasonal flavors for a wonderful summer on the terrace of Les Deux Magots. Available from mid-June, they will complement our regular menu.

Among the new starters to discover, the beautiful beef heart tomato sings of the South with a creamy, melting burrata. The melon charentais is served plain, or drizzled with Porto, or even with Auvergne ham for the most gourmet among you.

As for new dishes, the saddle of lamb takes on summer colors with a piperade and homemade tapenade. Monkfish is cooked at a low temperature to preserve the delicacy of its flesh, and served with mashed potatoes and a Dugléré sauce (a little festival for the taste buds, combining fish stock, white wine, cream and tomato). Finally, we head for gourmet Italy with the last of the new dishes: rigatoni with tomato and stracciatella.

Finally, freshness – that’s what we love about this time of year! The Saint Germain ice cream sundae is a delight not to be missed. Judge for yourself: mango sorbet, lychee, white peach, chantilly, St-Germain liqueur (3cl), and brandied cherries. Summer temperatures are a perfect excuse to succumb. The Paloma cocktail is a must-try if you come for a drink on the terrace of Les Deux Magots. The recipe combines Patrón Reposado tequila, Fever Tree grapefruit for sparkle, and lime for a hint of acidity. Drink in moderation, of course.

Other suggestions proposed in the spring will remain available this summer. These include Osciètre Prunier caviar (10g) – from France – and its quenelles of mashed potatoes with herbs and Isigny crème fraîche ; Primavera veal blanquette, rice pilaf; and grilled zucchini croque with savory.

This summer at Les Deux Magots, in the lush greenery of our new garden terrace, at tables facing the lively boulevard, or in the pleasant cool of our dining room.
