The Chef's new suggestions

Spring at Les Deux Magots is accompanied by new suggestions of the moment, to be discovered on the plates from Thursday April 24, 2025.

Two starters first. Let’s start with artichokes à la barigoule, a Provençal recipe that we’ve revisited here by garnishing artichoke bottoms with carrots, onions and fresh goat’s cheese. The other new starter you can try uses one of spring’s star products: white asparagus. Discover them seasoned with a lemon emulsion and fresh herb olive oil. Just the thing to make them stand out!

Now let’s look at the dishes. If seasonality of flavors is important to you, you’ll appreciate fennel in our catch of the moment. We suggest it steamed with a fine filet of Saint-Pierre, and a beurre blanc sauce.

Are you a meat lover? Good news, the Charolais beef entrecôte (a fine 350g piece) is just waiting for you, accompanied as it should be by pommes frites and béarnaise sauce. There’s another choice, a vegetarian option that’s also, and above all, tasty: coquillettes flavored with truffles, combined with parmesan and broad beans.

You’ve been raving about them over the last few weeks, so we’re keeping them among our suggestions for a while longer: the Primavera veal blanquette with greens and carrots, the grilled zucchini and savory croque for gourmet snacking, and finally the potato quenelles set with Prunier Osciètre caviar from France.

In a completely different vein, Hennessy Tonic is the cocktail of the moment to try – in moderation – to enjoy the mild spring evenings that are back.

These suggestions will be available at Les Deux Magots from Thursday, April 24th, and we look forward to seeing you around mid-June for new suggestions, this time featuring summer products and a focus on freshness!
